Unit of Protein Nitrogen

Protein nitrogen unit (PNU) is a unit of measurement for the protein content of foods and biological fluids.

EBA represents the amount of nitrogen in 1 gram of pure protein. Since on average proteins contain about 16% nitrogen, 1 EBA is equivalent to 6.25 g of pure protein.

EBA is used to express the concentration of total protein in food, feed, blood plasma and other biological fluids.

Determination of the amount of EBA is based on measuring the total nitrogen content of the sample using the Kjeldahl method. The resulting value is then divided by 0.16 (16% protein nitrogen) to obtain the equivalent amount of protein in grams.

Thus, the protein nitrogen unit allows you to quickly and easily estimate the total protein content of various foods and liquids.
