Rigela is a Latin word that means "nail", "clove tree" or "carpet". This was the name of the New Year's table, symbolizing wealth and prosperity in life.
Snacks played a major role in the New Year's table. It was they who provided the opportunity for a hungry guest to satisfy his hunger, and vinaigrettes, salads, meat dishes, cold quenelles, and kebabs were used as appetizers. A plate of Olivier was an invariable attribute of the New Year's table. Meat was also a mandatory dish at the feast. However, on the table there were also dishes typical of the national cuisine. For example, Ukrainian lard, Polish sausage, Hungarian cuisine (cucumbers with garlic), Bulgarian cuisine and others.
Dishes, except for New Year's salads and ice cream, were usually served on separate dishes, located next to stacks of plates. According to established tradition, during the New Year, the symbol of the year - a horse - should always be present on the table. It was cut from the ham and served a little later. This ritual has not taken root in everyday life, but we still try to observe the New Year’s food tradition.
