Cottage cheese

You can prepare many delicious and nutritious dishes from cottage cheese. Fat cottage cheese can be consumed in its natural form with milk, sour cream, sugar, or made into a curd mass. Lean cottage cheese makes these dishes less tasty. It is best used for making cheesecakes, dumplings, casseroles, and puddings. These dishes can also be prepared from fatty cottage cheese.

To prepare dairy dishes, cottage cheese should be minced or rubbed through a sieve. To serve with milk, sour cream, sugar, you don’t have to wipe the cottage cheese, but just knead it thoroughly with a spoon.

To prepare cheesecakes, dumplings and some other dishes, the cottage cheese should not be very wet. Cottage cheese with high humidity should be placed under a press, wrapped in clean gauze or linen napkin, washed with hot water without soap. It is most convenient to place a package of cottage cheese between two clean kitchen boards, scalded with boiling water, and put some weight on top equal to the weight of the cottage cheese, and leave it there for 2-3 hours.

Cottage cheese with milk
100 g fresh cottage cheese, 125 ml milk, 15 ml sugar syrup, 5 g raisins. Rub the cottage cheese through a sieve, dilute with a tablespoon of milk, mix with sugar syrup and seedless raisins washed with cold boiled water. Serve with milk.

Cottage cheese with fruit
100 g fresh cottage cheese, 10 g sour cream, 50 g fruit, 15 ml sugar syrup. Pass the cottage cheese through a meat grinder or rub through a sieve, add sugar syrup, sour cream and mix well. Place the curd mass on a plate, shape it into a cone and decorate with pieces of fresh or canned fruit.

Curd sandwich pasta with cheese, apple, dill and jam
4 tbsp. spoons of fresh cottage cheese, 1 apple, 2 tbsp. spoons of chopped dill, 50 g butter, 50 g processed cheese, jam. Grind the apple, after removing the skin and core, add dill, grated cottage cheese, softened butter and cheese. Mix everything thoroughly. Spread this mixture onto slices of white bread and top with a spoonful of jam.

Cottage cheese with candied fruits
70 g fresh cottage cheese, 10 g sour cream, 10 g candied fruits, 10 ml sugar syrup, 2 vanilla crackers. Add sour cream, sugar syrup, finely chopped candied fruits to the pureed cottage cheese and stir. Serve the curd mass as a dessert or for breakfast with vanilla crackers.

Cottage cheese with berries
Squeeze fresh homemade cottage cheese well and mix with mashed berries (raspberries, strawberries or cherries). In winter, fresh berries can be replaced with jam made from them. Wrap the cottage cheese with berries in linen and place under pressure in the refrigerator for several hours.

Curd sandwich paste with sour cream and carrots
50 g low-fat cottage cheese, 1 tbsp. a spoonful of sour cream, 1/2 a small carrot, sugar syrup, saline solution. Grind the grated cottage cheese thoroughly with finely grated carrots, add sour cream, sugar syrup, salt solution to taste and beat everything well. Use for sandwiches.

Lazy dumplings
120 g fresh cottage cheese, 20 g wheat flour, 10 g butter, 30 g sour cream, 1/2 egg, 10 ml sugar syrup, 3 ml saline solution. Rub the cottage cheese through a sieve, mix with the egg, sugar syrup, salt solution, flour and softened butter. Roll out long flagella from the resulting mass and cut into shoals. Place the dumplings in boiling water and cook until they float (about 5 minutes). After this, transfer the dumplings to a frying pan with butter, pour in sour cream, put in the oven for 5 minutes and serve immediately.

Lazy dumplings with potatoes
50 g low-fat cottage cheese, 100 g potatoes, 1/4 onion, 2 tbsp. spoons of wheat flour, 2 teaspoons of butter, 1/2 egg, 3 ml of saline solution. Boil the potatoes and pass them hot through a meat grinder along with the cottage cheese. Add fried until golden brown to the resulting mass.
