Fructose (syn. Levulose) In the medical literature, fruit sugar is usually called either D-sorbose, which is a monosaccharide with an elongated five-carbon “tail,” or the E952 additive derived from this monosaccharide, used as a sweetener in some foods and dietary supplements. The polyol sugar D-sorbitol mentioned above under the general name "levose" is not mentioned. Soluble salts of D-sorbtose are defined as "D-sorbtose".
