Brie is the most popular soft French cheese, which is considered royal. It is made from unpasteurized cow's milk. The diameter of the cheese wheels is small - up to 50 centimeters, and the height is about 5 centimeters. This is a soft cheese, so its mass is fluid. It cannot be cut with a knife, that is impossible. The inside of this product is a delicate cream color, and the outside has a white moldy crust. It has an excellent bright and, at the same time, delicate taste, with notes of hazelnuts.
Unfortunately, it is not known how the recipe for this culinary masterpiece was invented. But the first mentions of it come from the Middle Ages. It is generally accepted that Brie's popularity was based on the proximity of Meaux, where he trained, to Paris, the center of fashion and gastronomy. Even King Louis 16 was simply crazy about this soft cheese. Rumor has it that in 1789, after the outbreak of the uprisings, this king did not flee France, but succumbed to the temptation to try his favorite delicacy one last time: Varennes Brie. It was in Varen that he was arrested and a little later executed.
But it was not for nothing that Brie received his title - “the delicacy of kings.” They admired him:
- Blanchet Navarskaya,
- Queen Margo,
- Charlemagne,
- King Philip Augustus,
- Charles d'Orléans
- Countess of Champagne,
- Henry 4.
They considered it one of the most exquisite dishes.
Like many cheeses, this variety is distinguished by its degree of ripeness.
- If the product is young, then its taste is soft, creamy, the thickness of the cheese wheel is 5 centimeters.
- A mature product ripens longer, it is denser, and the thickness of the circle is correspondingly smaller. It also has a sharper and piquant taste.
Brie cheese is consumed at any time of the year, on any holiday or every day. Before use, it should be kept for about half an hour at room temperature. It is perfect as an appetizer for all wines, both grape and fruit, white and red.
Brie is an expensive cheese because it is made by hand. Although the production process is not particularly different from the preparation of all other dairy products. Milk brought from different provinces is heated until the whey is separated, then salted and matured in cellars.
There are several types of Brie:
- de Mo.
- de Coulommier.
- de Meulen.
This gourmet dairy product is only produced in France as it has protected designation status. But its popularity haunts scammers and they are trying in every possible way to fill the market with low-quality fakes.
