Joyeux-Lavergne Filling

**Joyeux-Laverny filling** (French coulage joyeuse-laverdente) is one of the varieties of chocolate dough used for making Easter cakes, donuts and muffins by layer-by-layer filling of dough pieces with liquid dough. The name was given in honor of the French chocolatier Amédée Joyer, who ran the confectionery workshop at the factory of the famous chocolatier Theodore Lavergne.
